Inspired by traditions from around the world, ama is a name used across multiple cultures to signify “mother.” Offering an all-day dining experience, Executive Chef Randall DeFalco, formerly of The Sea Grill at Rockefeller Center, brings his formal training and international knowledge to introduce a seasonal menu utilizing different cooking techniques.

Randall Defalco is the Executive Chef at ama, where he oversees the kitchen. The Las Vegas native began his career in 2007 as the Sous Chef at Steelhead Diner in Seattle while receiving a degree at The Art Institute of Seattle.
At ama, Defalco seeks to bring his twelve years of culinary experience and global inspiration from his recent travels to Italy, Korea, and the Philippines. He has created an ever-evolving seasonal menu incorporating fresh ingredients from local purveyors with an international flare.Visit
